Salmon Chops with Shrimp Stuffing

Rinse salmon chops, drizzle with juice of one lemon and let stand. Chop the shrimps. Finely crumble bread. Knead butter, bread, shrimp and egg yolks together. Pluck dill from stems, chop finely and knead in. Season the mixture with salt and pepper.

Then season salmon cutlets with salt and pepper and place in small ovenproof dessert dishes. Form the filling into the belly opening. Spread crème fraîche on top of the fish.

Bake in a heated oven at 175 degrees Celsius /fan 150 degrees Celsius /gas mark 2 for 25 minutes. Garnish with dill and lemon wedges and bring to the table in dessert bowls.
