For the salmon fillet with herbs de Provence, mix the herbs with some olive oil. Season salmon with salt and pepper, brush with herb oil and chill for about 2 hours.

Preheat the oven to 160 degrees convection or 180 degrees upper-lower heat. Place salmon in a mold with a little oil and roast in the oven for about 15 minutes, basting with oil.
