For the salmon with spinach, coarsely chop the spinach leaves. Peel and press the garlic. Squeeze the lemon.

Cut salmon into bite-sized cubes and rub with salt, pepper, lemon juice and garlic. Peel and dice onion.

Heat oil in a pan and sauté salmon and diced onion. Deglaze with vegetable soup and whipping cream.

Simmer briefly and add spinach leaves. Arrange the salmon with spinach and serve.
