Instructions:

For sausage dumplings, press cooked potatoes through a potato ricer and mix with remaining ingredients. Knead into a smooth dough. If the dough is too sticky, knead in some more flour.

For the filling, finely mince the different types of sausage together with the diced onion and garlic cloves. Divide the dough in half and form 2 rolls.

Cut equal pieces of the dough, flatten them and wrap the sausage dumplings in them. Close tightly and simmer in lightly boiling salted water for about 15 minutes.

Remove the sausage dumplings and serve with green leaf salad.
