Instructions:

Remove the peel from the cooked, peeled potatoes and press through. Squeeze the curd in a dish and soak for 30 minutes. Mix everything together. Beat the egg with the sugar and add to the curd with the lemon skin. Now sift in the flour, mix properly and let rest for min. one hour.

Heat the oil slightly in a frying pan and make dumplings. Bake at a very low temperature for about 10 minutes on each side.

Apple puree: Remove the skin from the apples and cut out the core, cut into small pieces and cook with the sugar in the apple juice until soft on the stove. Then mash the apples and season with cinnamon, juice of one lemon and calvados.

Serve the curds on the apple sauce.

Tip: Cinnamon gives dishes a wonderful sweet and spicy note!
