Instructions:

Select beans, rinse and soak for one night. Cover with water and place in a heavy casserole and simmer on low heat for 30 minutes. Drain and set aside. Heat olive oil in the same casserole. Sweat onions, garlic, until translucent.

Add thyme, paradeis pulp, oregano and sugar, add finely diced tomatoes and mix everything together. Add liquid as needed. Season with pepper and salt. Simmer on low heat for 30 minutes and reduce. Stir in parsley and beans. Pour everything into an ovenproof dish.

Spread feta evenly over the top. Sprinkle with pepper and oregano. Bake in a heated oven at 220 °C for 30 minutes.
