Prepare into a slightly crumbly firm dough. Form balls of about 3 cm, press them flat, press a bulge in the middle with your thumb. Roll the top in egg white and then in powdered sugar. Place the cookies on a greased baking tray and fill the cavities with a little jam or jelly. Bake in a heated oven for 25 minutes on gas mark 3.5.
