Instructions:

Place flour in a large enough bowl and make a bulge in the center. Mix liquid butter with one or two tablespoons of warm water and salt. Add to flour form with eggs and knead together to form a firm dough. Wrap in plastic wrap and rest at room temperature for an hour.

Filling: wash lemon well with hot water and finely grate peel. Mash ricotta with a fork and mix with lemon zest. Refrigerate.

Roll out pasta dough thinly and cut out circles with a coffee cup. Form a teaspoon of ricotta in the center of each and top with another round of dough. Press the edges smooth. Bake in enough olive oil until golden brown and drain on paper towels. Drizzle with honey and bring to table on the spot.

Serve: Serve with marinated seasonal fruit.
