Seitan – Sauerbraten with Brown Sauce

Marinate seitan for a few hours, preferably overnight, in a marinade of salt diluted with water, vinegar, pepper and onion rings, add a few more bayberries and bay leaves.

For the sauce, melt light butter, sauté chopped onion in it until translucent, sprinkle flour over it and roast until light to medium brown. Add soy milk and drinking broth as well as a little herb salt and pepper and simmer on low heat for 5 to 10 min.

If necessary, the sauce can be thickened with arrowroot seed.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste!
