Instructions:

Boil milk and salt, add butter and melt. Add the semolina and let it boil briefly. Remove from heat and cool. Whisk the yolks and fold them in. Beat the egg whites until stiff, gradually add the sugar and vanilla sugar and continue beating.

Set aside 1/3 of the beaten egg whites. Stir the curd into the semolina mixture and fold in the remaining snow. Pour half of the mixture into a well-greased gratin dish, smooth it out, top with fruit and spread the remaining mixture on top. Spread the remaining snow evenly on top and place the pan in the middle of the heated oven and bake at 160 °C for 40-50 min.
