For the semolina pancake, boil milk with vanilla pod, salt, butter and cinnamon stick. Add the semolina, bring to the boil and thicken. Remove from heat and allow to cool slightly.

Beat the yolks with the sugar until foamy and add to the semolina mixture. Beat egg whites until stiff and fold in as well. In a wide pan, slowly coat half of the mixture.

Let it color, turn it over and let it color again, break it up with a spatula. Let it color again and again on all sides.

Remove from the pan, then fry the second half. Remove cinnamon stick and vanilla bean before frying.
