For the semolina pancake with apricot roast, slowly stir the semolina into the salted, boiling milk, stirring constantly, and boil down to a thick consistency.

Heat the butter in a large fireproof pan and brown the semolina mixture in it. Cook in the oven at 180° C, stirring frequently with a fork.

After about 20 minutes, add the sugar, vanilla sugar, raisins and lemon zest and continue to cook until the semolina is grainy and browned.

Sprinkle the semolina pancake with sugar.

For the apricot roast, pit the apricots, cut them into small pieces and bring to a boil with water, granulated sugar, lemon juice and a pinch of cinnamon. Cook the fruit for about 10 minutes until soft, stirring several times.

Serve the semolina pancake with apricot roaster.
