For the shallot pesto with macadamia nuts, roast the shallot cubes in the olive oil at medium temperature until golden brown.

Caution: Do not caramelize the shallots too hot, the tender cubes will burn very quickly.

Coarsely chop the macadamia nuts in a mortar or with a large knife. Add the fried shallots and grind with a pestle to a fine pesto.

Shallot pesto with macadamia nuts goes great with veal fillet, vegetables and pasta!
