Dice the meat. Slit the chili peppers, remove the seeds and cut into fine rings. Blend the ginger, chili, vinegar and garlic with a hand blender. Add the spices and a little salt and mix thoroughly again. Marinate the meat in it for at least 2 hours.

Fry the onion in the clarified butter until golden brown. Remove the meat from the marinade, rub dry and fry on all sides until golden brown. Add the marinade and cook with the lid on for a few minutes.
