For the rice:










Instructions:

Chop the garlic, lemongrass and ginger. Fry together in olive oil in a wok and add the palm sugar and tamarind paste.

Add the seeded and chopped chili and the deveined and cut shrimp. Add the chopped vegetables and curry powder, stirring constantly.

Deglaze with mitsukan, pour in coconut milk and vegetable stock. Season with salt and use a mixture of honey, cornstarch and mirin to lightly thicken the curry.

Add chopped Thai basil and coriander greens.

Rice: Melt the butter and sauté the spices in it.

Add the rice and sauté briefly. Add double the amount of water and steam.

Serve the shrimp curry in the jasmine scented rice formed into a ring.
