For the carrot vegetables, chop the onion and sauté in a little olive oil until translucent. Peel the carrots, grate coarsely and fry briefly.

Salt and cover with water – steam until soft. Finish with finely chopped parsley. Serve the carrot vegetables with wholemeal bread or boiled potatoes.
