Clean leek, rinse thoroughly and cut diagonally into thin rings. Rinse apple, cut into quarters and remove core. Cut apple flesh diagonally into thin slices.

Rinse meat and dry with kitchen paper. Cut strips about five centimeters long and three millimeters thick against the grain. Heat vegetable fat in a large frying pan. Fry the meat strips in it in batches. When the meat is browned all over, add the leek and apple pieces and fry them briefly at a high temperature. Then add the marjoram. Pour the soup over the meat. Add the cheese and simmer at low temperature for about eight minutes. Finally, season the meat to taste with mustard, salt and freshly ground pepper.
