Instructions:

Bring long grain rice to boil in 625 ml lightly salted water, cover with lid and cook at lowest temperature for about 20 minutes.

Cut the meat into strips. Remove seeds from peppers and cut into strips. Cut spring onions into rings.

Boil coconut milk and add curry powder. Add meat and vegetables, cook for about 6 minutes.

Add basil leaves, season with soy sauce and sugar.

Heat oil. Remove basil leaves and deep-fry for about 1 minute, then drain.

Mix long grain rice with peanuts and lemon zest and bring to the table with the cutlets.

Garnish with fried basil.
