For the smoked meat with mashed potatoes and parsnips and horseradish, place the smoked meat in hot water and boil for about 50 minutes. In the meantime, boil the potatoes.

Clean the parsnips and boil them in another pot with a little water. Drain the potatoes and parsnips, reserving the cooking water.

Press cooked potatoes and parsnips through a potato press. Bring milk to a boil with salt and nutmeg, stir in squeezed vegetables and add some more of the parsnip cooking water if the consistency is too firm.

Cut the smoked meat into slices and serve the smoked meat with mashed potatoes and parsnips and horseradish with mustard.
