Finely chop the lemongrass, wash the snails well and drain. Cut the papaya (or pumpkin flesh) in half, remove the seeds and cut the flesh into smaller pieces. In a soup pot, bring the chicken soup to a boil with the seasoning paste, lemongrass, curry leaves and oil, then simmer for 5 minutes. Now add the papaya or pumpkin and cook until almost tender. Then add the snails and simmer some more until the flesh is soft. Season to taste with salt and pepper. Meanwhile, fry the onion rings in a little butter. Serve the soup in bowls and garnish with the fried onion rings.
