For the snow dumplings, beat 4 egg whites with 125 g granulated sugar until stiff. Poach in a milk bath or steamer at 80 degrees. For the vanilla sauce, heat 300 ml liters of milk and 100g sugar with the vanilla bean. Mix 4 egg yolks with 200g of milk and stir into the warm milk. Heat slowly until a thick sauce is formed. Quickly remove from heat, continue stirring until the sauce is slightly overcooled and serve with the snow dumplings.
