For the snow hearts, finely grate the marzipan. Mix Fini’s Feinstes flour, powdered sugar, marzipan, lemon zest and gingerbread spice. Cut butter into small cubes and now knead all ingredients with your hands into a smooth dough. Wrap the dough in plastic wrap and chill for about 1.5 hours. Roll out on a lightly floured work surface to a thickness of approx. 3 mm, cut out cookies with a heart cutter and place on a baking tray lined with baking paper. Keep kneading the leftover dough and roll out again. For the glaze, beat the egg whites until stiff. Then add the powdered sugar by the spoonful and continue to mix. Brush the cut-out hearts thinly with the glaze and bake in the preheated oven at 150 °C (hot air) for about 12 minutes until the snow hearts are ready.
