For the snowmen, preheat the oven to 95 °C.

Beat the egg whites with a pinch of salt until half stiff, add half of the powdered sugar in portions and beat until stiff.

Scrape out the vanilla pod and gradually mix the pulp with the beaten egg whites together with a few drops of filtered lemon juice and the remaining powdered sugar.

Pour the snow into a piping bag and pipe balls about 4 cm in diameter, a little apart, onto a baking tray lined with baking paper. Squirt a slightly smaller one on each ball and let dry in the preheated oven for at least 140 minutes.

The snowmen should not take on any color.

Using melted chocolate and a pencil with edible paint, draw faces and buttons on the snowmen and tie scarves around the snowmen’s necks from the fruit gum strings.
