For the sorrel sauce, lightly sweat the flour in hot butter. Add finely chopped sorrel and stir through.

Also fry some finely chopped parsley and pour in the broth.

Stir well and simmer for half an hour. Season with salt, pepper and grated ginger to taste.

Finally, stir in sour cream and let the sorrel sauce boil again briefly.
