Sourdough mixture: 2 cups water, 2 cups flour (type 405), 1 tbsp sugar, 2, 5 tsp yeast in a glass bowl form, stir through and cover with a Geschirrhangl. Leave for 4-5 days, stirring several times. Then keep in the refrigerator. If necessary, extend with flour, water, sugar and stand at room temperature for a day.
