Instructions:

Bring salted water to a boil in a large saucepan. Pour in the spaghetti and simmer at a steady temperature for ten minutes (no longer!). Drain well and keep warm.

While the spaghetti is making, prepare the rest of the ingredients.

Heat the liquid from the anchovy can together with another tablespoon of oil in a saucepan. Sauté the sliced onion and the chopped tomatoes and mushrooms in this oil until soft. Add the cooked spaghetti and the bay leaves and season to taste. Note that the dish is already salted by the anchovies! Sauté at low temperature for 10-15 minutes, adding most of the anchovies during the last 5 minutes.

Cut the bacon into small cubes and roast them until crispy brown.

Take out the bay leaves. Pile the spaghetti on a hot plate and garnish with the remaining anchovies, the bacon cubes and grated parmesan.

Our tip: Use a bacon with a strong flavor – this will give this dish a special touch!
