For the spaghetti with carbonara sauce, first peel and finely dice the shallots. Cut the bacon into strips. Finely dice the ham. Grate the Parmesan cheese.

Cook the spaghetti in salted water until al dente, mix with olive oil, herbs and butter and set aside.

Melt the butter in a saucepan and sauté the shallots, bacon and ham in it. Add salt and pepper and then deglaze with the wine. Reduce until there is no liquid left. Then add the water and reduce by half. Add the sour cream and cook on low heat for about 5 minutes.

Then stir in the Parmesan cheese. Pass through a coarse sieve and puree. Once the sauce flocculates, empty it into the pot and reduce to about 500 ml. Then pass through a fine sieve and pour into a siphon bottle. Whisk up with 2 cartridges.

Serve spaghetti with carbonara foam sauce.
