Instructions:

A great pasta dish for any occasion:

1. rinse and dry salmon fillet, drizzle with half the lime juice. Freeze in the freezer for about 1 hour.

2. clean fennel, keeping greens if desired, rinse and cut into strips. Sprinkle with remaining lime juice.

3. peel and finely dice shallot. Add fennel strips and shallot cubes to the hot vegetable soup form and cook for about 15 minutes.

4. place salmon fillet on a kitchen board. Cut into very thin slices with a sharp kitchen knife.

Cook spaghetti in salted water according to package instructions until al dente. Tie sauce and season to taste. Remove from heat and fold in sour cream or crème fraiche. Add the salmon fillet to the sauce and heat briefly. Serve spaghetti with sauce and garnish with chopped fennel greens.
