For the sparkling cakes, knead all the ingredients into a soft, smooth dough. Cover the dough and let it rest for 1 hour.

Roll out the dough to the thickness of the back of a knife and wheel into squares or triangles.

Then bake the dough corners in hot fat until golden.

It is advisable to baste the dough pieces with hot fat with a spoon after placing them in the pan, so the corners rise better.

For the sweet version sprinkle with powdered sugar and serve with stewed fruit or applesauce. For the savory version, serve with sauerkraut.
