For the decoration, remove one slit including peel from the mango per glass, set aside. Remove the peel from the remaining mango. Cut the flesh along the stone into small pieces and cut roughly into cubes. Grind with a hand blender. Pass puree through a fine sieve, cool.

Cut half of the limes into as many mock slices as glasses. Slit each slice once from the rim to the center. At the slit, the lime slices will later be pinned over the rims of the glasses.

Squeeze the remaining limes. Mix the mango pulp with the lime juice (according to your taste, for 6 glasses 3 to 4 tbsp.), divide among the glasses. Pour on the sparkling wine. Stir once so that the fruit pulp is properly distributed.

For decoration: mango wedges, lime slices and lemon balm are pinned to the glass ends.
