And this is how you make the speculaas:

Stir butter, milk, egg yolks, honey, salt and the herb mixture of cardamom, cloves, nutmeg and cinnamon – the exact composition of which remains a secret – together and stir the whole thing for 5 to 10 minutes until creamy. After that, the flour is mixed in and the dough is left to cool for about 120 minutes. Then form the dough into rolls and press them into the floured speculoos board. With a guitar string or a nylon thread (etc.) pull the dough over the upper edge of the board, so that the figures are separated from the dough. After that, the figures are “knocked out” and placed on a buttered baking tray. Finally, they are baked for 12 to 15 minutes in a heated oven at 180 °C . They should have only a slight brown color. ”
