For the spelt carrots, roast the spelt in a hot pan and pour hot water. Cook on low heat, covered, for about 1 hour (for spelt rice, the cooking time is reduced to 20-25 minutes), until the spelt grains are soft. Add more liquid if needed.

Cut carrots into small cubes and add to spelt towards the end of cooking time. Allow spelt with carrots to soak a little longer. In the meantime, remove thyme leaves from stems. Season the spelt carrots with the spices, stir in olive oil and serve as a side dish.
