For the spelt pancakes, mix the soy flour with 12 tablespoons of cold water, add the milk, egg whites, salt and flour and stir until smooth.

Heat a pancake pan, spread a little oil in the pan with a kitchen brush. Pour a ladleful of pancake batter into the pan and brown lightly on both sides.

For the next pancakes, brush the pan again, pour in batter, repeat process until no batter is left.

Keep the spelt pancakes warm. Fill with sea buckthorn or apricot jam and sprinkle with powdered sugar if desired.
