Cut the chicken breast into strips and the garlic into fine cubes. Heat the sesame oil in a pan and fry the chicken breast strips briefly. Add the garlic and fry briefly. Season with salt and pepper and place in a large bowl with the remaining frying oil. Allow to cool. In the meantime, cut the strawberries in half for the fruit salad. Peel the mango with a peeler, first remove the flesh from the stone and then cut into 2 cm cubes. Cut the melon into quarters and remove the seeds with a tablespoon. Peel the melon quarters and cut the flesh into fine slices. Now mix the fruit into the chicken breast strips. Toast the sesame seeds in a pan without adding any fat until they begin to smell fragrant. Mix the sugar with salt and lime juice and fold into the fruit salad with the sesame seeds, chili, almonds and coriander greens. Arrange on plates and garnish with coriander leaves.
