Instructions:

For the spicy goulash soup, cut the meat into cubes of about 2 cm and fry vigorously in hot clarified butter or lard.

Peel, wash and chop the onions, add and fry over high heat. Stir in tomato paste, habanero and garlic.

Sprinkle with paprika, thyme and marjoram, sauté briefly and deglaze with beef broth and red wine. Cover and let simmer for one hour at moderate heat.

Meanwhile, peel and slice carrots. Halve peppers, remove white seeds and skin and cut into small pieces. Add the chopped vegetables to the goulash soup and stir in.

Season the soup with cumin, salt and pepper and simmer for about 30 minutes more. Season the goulash soup again with salt, pepper and sugar.

Divide into bowls, sprinkle with parsley and garnish with paprika.
