For the savory pancake, prepare a pancake batter from the flour, milk, eggs and a pinch of salt and bake out about 8 pancakes in a hot pan.

For the filling, clean and wash the spinach. Melt some butter in a higher saucepan, finely dice the onions and sauté until translucent.

Add the spinach and let it collapse in the covered pot. Cover and cook for about 10 minutes, seasoning with salt, pepper and nutmeg.

Then squeeze the spinach in a fine-mesh sieve. Heat the strained tomatoes and season with salt, sugar, garlic granules, herbs and cayenne pepper.

Place a pancake in a greased pie dish (or a greased ovenproof round dish) and top each with 1/8 of the spinach, tomato sauce and cheese. Continue in this way until all the ingredients are used.

Finally, sprinkle a thick layer of cheese on top and bake in the oven at 250°C for about 20 minutes (2nd rack from the bottom).

The spicy pancake tart tastes very good with leaf salad.
