1. sift flour and salt in a suitable bowl. Boil butter with water in a saucepan, pour into the flour on the spot – before too much liquid evaporates – and stir quickly with a wooden spoon to form a smooth dough. Immediately wrap in foil and cool to hand heat. Preheat the oven to 180 degrees.

Roll 1 tablespoon of dough at a time into a ball, press into a muffin tin and press up a rim all around. Lay a 2 cm wide strip of aluminum foil – blunt side out and place in the mold as a ring. This way, the edge won’t fall inward during baking and the bottom will still brown. Prick the bottom several times with a fork. Bake at 180 °C for about 15 minutes.

Clean the remaining ingredients and roughly chop or divide into bite-sized decorative pieces. Spread herb cream cheese as a base in the patties. Rinse and dry lettuce leaves and tear into bite-sized pieces. Spread out patties with it.

Fill the green tartlets with strawberries, goat cheese, chopped rucula and pepper, trout caviar with chopped egg and chives. In the radicchio tartlets fill ham with green pepper and artichokes and maties with radishes and shallots. Set aside to cool until ready to eat.

Tip: For the filling, just let your imagination run wild and go with what you already have at home.
