For the spinach bruschetta, finely dice an onion and garlic cloves, sauté in hot peanut oil. Add fresh spinach leaves and cook over low heat. Add bacon cubes, spices to taste and continue frying. Slice the bread (baguette,ciabatta,white bread). Roast the pine nuts. Then put the spinach on the bread slices, pine nuts and parmesan on top and bake in the oven at 180°C until the spinach bruschetta is crispy. Bon appétit
