Mix the eggs, semolina, flour, salt and spinach in a baking bowl, add water gradually and knead the mixture until it forms a dough with light bubbles. Push the dough through the dumpling sieve into the water boiling in a Reindl and pull the dumplings until they float on the surface of the water. Remove and cool in cold water. The Knöpfli prepare well. Warm them in butter in a frying pan before serving.
