For the gratinated spinach apples, heat 1 tsp butter in a frying pan and sauté the onion. Add the thawed spinach. Season with salt and pepper.

Add cream and sliced Gorgonzola and simmer over low heat until cheese is melted. Heat 1 tsp butter in another pan, briefly sauté diced tomatoes and pears, sprinkle with rubbed thyme.

Cut potatoes in half crosswise and place in a baking dish. First add the spinach-cheese mixture, then the diced tomatoes and pears. Bake the baked spinach potatoes in the preheated oven at 200°C for about 10 minutes.
