Clean and rinse the spinach.

Bring salted water to a boil and blanch the spinach in it. Empty into a sieve, put into cold water and drain again. Then chop finely.

Heat the butter in a saucepan.

Peel and finely dice the onion. Sauté in the butter. Add the flour and sauté. Pour in the soup and milk and bring to the boil. Stir a lot so that nothing burns.

Now add the spinach and let it simmer. Season with pepper, salt and a pinch of nutmeg.

Fry the fried eggs with a little butter in a frying pan.

Serve the spinach with fried eggs.
