Roll out the shortcrust pastry and cut out cookies (discs) of the same size, about 4 cm in diameter, with a serrated round cutter and place them on an ungreased baking tray. Cut 3 small holes in half of the biscuits. Bake until light, spread the full slices with jam and place the over-sugared perforated slices on top.
