A bean recipe for every taste:

1. clean and peel the carrots and celery and cut them into tender strips. Rinse the spring onions and cut into narrow rings. Peel and seed the papaya and cut into sticks.

Rinse and dry the soybean sprouts. Chop the garlic.

Heat the oil in a frying pan and add the garlic. Add the prepared vegetables and papaya sticks and season everything together with salt and pepper.

After frying for a short time, extinguish the vegetables with 3 tablespoons of soy sauce and then cook until al dente.

Mix the cornstarch in a little cold water and thicken the sauce with it. Put the vegetables on a plate and let them cool down. Now add the lemon balm.

Mix the flour in a cup with 1 tablespoon of cold water. Now stir it with 2 to 3 tablespoons of hot water.

Place the pastry sheets on a damp dish and coat with the vegetable-papaya mixture. Brush the edges with the flour mixture and roll up the pastry sheets. To do this, wrap the side edges toward the center and then roll the whole thing up. Press the roll lightly so that the seams close tightly.

Heat the fat to 180 °C and deep-fry the spring rolls until golden brown. Drain on kitchen roll and bring to the table together with the remaining soy sauce (7 tablespoons).
