For the fried wild garlic leaves:









Instructions:

For the spring salad, wash the cabbage and lettuce and spin dry. Coarsely chop the walnut kernels. Mix nut oil, balsamic vinegar, salt, pepper and mustard to a marinade. Divide lettuces, spring herbs and wild vegetables among serving plates. Drizzle with the marinade and sprinkle with the chopped walnuts.

For the fried wild garlic leaves, wash the wild garlic and spin dry. For the batter, mix flour, cornflour, egg whites, beer and salt until thick.

Heat oil in a pan with high sides. Pull the dry wild garlic leaves through the batter and fry them out in the hot oil. Drain the fried wild garlic leaves on kitchen paper and spread on the salads.
