For the steaks with red wine onions, salt and pepper the steaks and sear them in hot oil for 2 minutes on each side. Then let them rest in the oven at 100°C for about 20 minutes.

In the meantime, melt the butter in the roast residue and sauté the red onions in it. Sprinkle with the sugar, let it caramelize briefly and deglaze with red wine. Simmer for a few minutes and season with salt and pepper.

Stir finely chopped rosemary into the sauce. Arrange the steaks with the red wine onions, garnish each with a sprig of thyme.
