The day before Boil the stilt covered with water. Add a cleaned and coarsely chopped greens, juniper and bay leaf. Cook at a mild temperature without a lid for 2 1/2 hours and leave in the clear soup for one night. Take out the stilt. Remove all fat. Finely dice the meat. Strain the clear soup (leaving the cloudy dregs) and heat gently. Finely dice the remaining greens and potatoes. Cook with the lentils in the clear soup for 5 minutes. In the meantime, finely dice the bacon and fry until crisp. Finely dice the onion and fry in the bacon fat until golden brown. Mix into the stew and season everything together with salt and freshly ground pepper to taste. Heat the popsicle meat in the soup and bring to the table sprinkled with chive rolls.

Serve with an iced Malteserkreuz Aquavit or other clear spirit.
