For the stilton-pumpkin stew, first prepare the stilton. To do this, peel an onion and lard it with cloves. Put the stilt with the spiked onion, caraway seeds and bay leaves into a large pot and pour in vegetable soup. Cook for about 2 hours, remove from the broth and let cool. Then remove the lean meat from the bone and cut into bite-sized portions.

Peel the pumpkin, cut in half, remove the pumpkin seeds and cut the pumpkin flesh into cubes. In a large saucepan, heat the oil and sauté the pumpkin pieces and onion pieces until slightly browned. Pour half of the pumpkin pieces and potato pieces with the soup and puree with a blender. Season to taste with curry, salt and pepper. Add the remaining potato pieces, pumpkin pieces, and the stilt pieces and simmer a bit more.

Garnish with fresh thyme and serve the stilton-pumpkin stew.
