For the belly meat, dice the onion and sauté until translucent. Mix bread cubes with milk, eggs, salt, onion and parsley, let soak a little.

Cut open the belly meat like a pocket (do not cut through the sides). Fill with the bread cube mixture.

Rub the belly meat with crushed garlic, salt and pepper. Put water in a pan, place the stuffed belly meat in the pan with the spatula facing down.

Fry at 200 °C for 15 minutes. Turn the belly meat, cut the spat and rub with caraway seeds. Add a tablespoon of lard to the juices.

Continue roasting, basting with the juice from time to time. If the juice runs low, add water again.

The rule of thumb for the remaining roasting time is, 1 kilogram of belly meat must roast for 1 hour.
