For the stuffed chicken breast with Schupfnudeln, first prepare the Schupfnudeln according to the basic recipe. Drain the cooked Schupfnudeln and set aside.

Trim the meat and pat dry. Cut deeply lengthwise with a sharp knife (do not cut through!). Season with salt and pepper. Stuff with cheese, ham and arugula. Tie or pin with a toothpick.

Heat some oil and butter in a pan and brown the chicken breasts in it. Remove the meat.

Heat whipping cream in the frying residue. Bind with cold butter flakes and season with salt and pepper. Add meat again.

In a separate pan, fry the Schupfnudeln in a little butter.

Serve stuffed chicken breast with Schupfnudeln.
