For stuffed melanzani, make deep diagonal incisions in washed melanzani at 2 cm intervals. Insert appropriately cut pieces of cheese and halved, folded bacon slices into the incisions.

Coarsely chop washed tomatoes and peeled onion and finely puree. Mix with cream and season with oregano, bay leaves, salt, paprika powder and pepper.

Pour into a heatproof dish and place the melanzani on top.

Cover and bake in a heated oven at 200 °C for 30 minutes.

Before serving, sprinkle the stuffed melanzani with oregano leaves.
